Peekaboo Pumpkin Pound Cake

You say "Pumpkin!"
I say "Pound Cake!"
Pumpkin!
Pound Cake!
Pumpkin!
Pound Cake!

OK. Enough cheering. Let's eat.

This is an easy-peasy, pumpkin-pleasy dessert with a surprise baked into every slice. Wanna know how I did it? Hop over to She Knows for the recipe.

P.S. The brown butter icing on this bad boy is my all-time favorite. That Martha Stewart knows her stuff, y'all.

What a fantastic idea! I really must try this one. I don't think we have 'pound cake' mix here in England but I'm sure I can find the equivalent.

You can make a regular cake mix more "pound cake-ish" by using half the water and oil, and adding a cup of sour cream.

I also tried this recipe using gingerbread and pumpkin bread mixes. But the colors were too similar and made it difficult to see the pumpkin shape inside.

The denseness of the two mixes - pumpkin & pound cake - really help the pumpkin shapes stay defined while they bake.

Happy baking!
